This is an elegant, layered Sauvignon Blanc, reminiscent of a dry white Bordeaux. A sophisticated, rich wine with layers of citrus, straw and minerality, herbal notes and a hint of creamy vanilla.

Tasting Notes

This is an elegant, layered Sauvignon Blanc, reminiscent of a dry white Bordeaux. A sophisticated, rich wine with layers of citrus, straw and minerality, herbal notes and a hint of creamy vanilla.

Winemaking

The Sauvignon Blanc was settled and fermented in a mixture of eggs, old wood and stainless steel. Semillon was fermented in stainless and spent 6 months on lees in an egg. Ten percent of the wine is made up from Lightning 2020 which spent 18 months on lees in barrel.
Total production 6,500 bottles.

The Vineyard

The Sauvignon Blanc grapes came from the beautiful Vaalvlei and
Stonefields vineyards in Stanford, which are close to the ocean and have decomposed granite soil. The Semillon is from La Vierge in the Hemelen-Aarde Valley.
