Wine Making

The 2021 season started with a cold, wet, winter that filled up soil reserves and provided sufficient cold units to break dormancy. The late cooler conditions continued well intospring, delaying bud break and initial growth. October saw the moderate temperaturesand sufficiently filled soil profiles leading to rapid vineyard growth and therefore the needto closely manage fungal diseases and weeds. November brought serious wind, leading to diminished flowering and fruit set, especially higher up on our steep slopes.
After February, the summer growing conditions were cool and moderate with nervewracking amounts of morning mist and high levels of humidity forcing us to sample asoften as possible, practice patience, completely reverse block orders and picking in smaller batches than before, yet eventually getting the grapes into the cellar at theoptimum ripeness, HEALTHY. I found that the berries were physiologically ripe at muchlower sugar levels, meaning that even though sugar ripening was delayed, we could stillpick for great flavour concentration on brilliant acid levels, and pull off lower alcohol wineswhile doing so! This vintage shows superlative ageing potential.

Winemaker's Note

Growing these vines and ultimately preserving their fruit in liquid form is a humbling experience. We tirelessly tend to these vines that daringly grow on incredibly steep NE-facing slopes stretching from 280m- up to 360m above sea level, where the vines are absolutely battered and, to an extent, almost bonsaied by the famous Cape winds.PIERRE is the offspring of 5 vineyard blocks that all head straight to the blend, so not only is there nowhere to hide in terms of winemaking, but you are undoubtedly left with a true mouthful of place.

The first picking came from a very rocky terrain planted to clone SB10, picked 2 weeks earlier than in 2020. Bunches were destemmed and enjoyed a whole-berry-ferment. The batch was pressed to barrel just prior to the completion of fermentation and this portion made up 30% of the blend. The latter 70% came in 3 weeks later and comprised ofSémillon GD1 and SB clones 10 and -11. After an overnight skin-soak berries were pressed to a clay amphora and old French oak barrique where the two varieties co-fermented.

PIERRE 2021 is thus a blend of 95% Sauvignon Blanc and 5% Sémillon of which 30% of the total wine was fermented on the skins. 57% of the blend matured in a clay amphora and 43% in French oak barrels, of which 21.5% was new oak. All batches were allowed to mature on their gross lees for 8 months prior to being bottled.

If there is one wine in our range that shows our close proximity to the cold Atlantic Ocean, it is PIERRE with its profound minerality that adds flesh to the high-altitude Sauvignon Blanc’s nervy acidity and fine tannin structure derived from skin contact fermentation and lees maturation. We like to enjoy this melting pot of blackcurrant, jasmine florae and grapefruit with a classic roll of Bánh mì.
