This range of wines is a tribute to our late farm manager, Japie Bronn, who has been instrumental in developing the vineyards on some of the steepest slopes in the Cape.

Winemaking

Following the iconic 2014-2019 Cape drought, 2019 will be
remembered all over South Africa as our smallest collective vintage in 14 years. With Constantia’s climate buffered by the cool breezes coming off the cold Atlantic Ocean the smaller crop, however, showed exceptional quality. Strange? No, as reproductive growth is far less affected by a stressful season than vegetative growth. In fact, the fruit actually benefits from these constraints by delivering smaller berries. The smaller the berry, the higher the skin to juice ratio and the higher the resultant concentration in colour and flavour – brilliantly balanced by
the higher acidity levels drawn from cooler ripening conditions.

Winemaker's Note

The 2019 Pas de Nom Red is a blend of 61% Merlot, 22% Syrah and 17% Malbec all grown on the steep mid-slopes of Beau Constantia, hand-picked in the early morning hours, cooled overnight and processed to an inert stainless-steel tank after being sorted down to berry level. The tank was slowly heated to temperatures that would accommodate natural fermentation, which took place under a watchful eye and curious palate that applied punch downs and pump-overs as required for just the right amount of extraction. Once fermentation was complete, free-run wine was drained to the barrel via gravity, as with the wine derived from the fermented skins being basket-pressed. The wine remained in 225L French oak, of which only 6% was new, for 18
months prior to being bottled. As with all our red wines, the 2019 Pas de Nom Red is unfined and unfiltered.
A bright crimson core with a ruby-red rim boasts aromas of underripe red cherries and moreish, fleshy, Merlot-born plums. Malbec and Merlot both give soft, rolling tannins, nicely balanced by the slight grittier structure and floral intensity of the Syrah to part the palate with a lasting impression and the typical tartness carried by these fruity varieties from our Cool climate region.
