Tasting Notes

Dark ruby colour. Rich, but soft, with notes of ripe raspberry and plum on the nose. Fruit aromas on the palate like cherry and mulberry, along with notes of herbs and spice with a delicate tannin on the aftertaste.

Vinification

Harvested early morning, alcoholic fermentation was completed in open top containers, with frequent punching down. After fermentation the wine remained in maceration on the skins for 3 weeks. Malolactic fermentation took place in old 500lt barrels. Aged for 10 months in 500lt barrels (third fill, French oak). Bottled in February.

Serving Suggestions

Cured meats, aged cheese, roasted meats and pasta dishes like lasagna.
